Cinnamon Apple Pancake Rings

     We wanted to try a new recipe with the apples that our family had picked at a local orchard. After looking on line, we ended up creating a recipe using various suggestions we found. The house had the aroma of freshly made apple donuts as these were being made. They would be a tasty breakfast for your children to wake up to on a cool fall weekend. We didn't peel the apple rings when we made this, but probably will the next time.

Cinnamon Apple Pancake Rings
Ingredients

1 cup flour                                                                          

1 1/2 tsp baking powder
2 tbsp sugar
1/2 tsp salt
1/4 tsp cinnamon
3/4 cup milk
1 egg
4-6 apples depending on the size of the fruit
vegetable oil for frying

additional 1/4 cup sugar + 1 tbsp cinnamon for topping

Sift the dry ingredients together in a medium size bowl. Add the milk and egg to the dry ingredients and mix well.
Peel and core the apples and then slice into 1/4 inch rings.
Dip each apple ring in the batter to coat.
Fry in a frying pan that has approximately 1/2 inch of hot oil in it. Cook until golden brown, flipping them over 1/2 way through the process.
Drain on a plate lined with paper towels.
Combine the additional sugar and cinnamon together in a small bowl and coat each ring in the mixture before serving.
